Banana Tea Bread


INGREDIENTS

250 gm over ripe bananas
250 gm castor sugar
2 eggs

1 ¼ tsp bicarbonate of soda
100 ml milk
60 ml oil
125 gm flour
125 gm whole wheat flour
1 tsp cinnamon powder
½ tsp ginger powder
1 tsp vanilla essence

METHOD

Puree the bananas and sugar together until smooth.
Stir in remaining ingredients. Beat well for 1 minute
Turn into a ½ kg loaf tin, which should be lightly oiled and lined with butter paper.
Bake at 180 degrees centigrade for 20 minutes or until golden in colour and firm to touch
Cool for 5 minutes before turning onto wire rack
